Saint Michael Siros PDO

It is a traditional Greek cheese produced on the island of Syros, which has been recognized since 1994 as a product with a protected name of origin (PDO). It is made exclusively from cow's milk. It has a cylindrical shape and hard texture, maximum humidity 40% by weight and minimum fat content on dry 36%.
